A delicious savory Pumpkin for a spicy meal!

Recipe Type: Entree

Serves: 4

Ingredients

1) Small Unripe Pumpkin (peeled)- 2 cups Cubed

2) Onions-1 cup chopped

3) Crushed Ginger-1 tbsp

4) Crushed Garlic-1 tbsp

5) Jalapenos/Green Chili-1 chopped

6) Large Tomatoes-2 (pureed)

7) Ground Coriander-1 tbsp

8) Ground Cumin-1 tbsp

9) Garam Masala-2 tspTurmeric-1 tsp

10) Red Chili Powder (Cayenne)-1 tsp

11) Water-2 cups

12) Salt- to taste

13) Oil-3 tbsp

Follow Instructions to make Pumpkin Masala

1) In a skillet, heat oil and add the onions.

2) Saute until slightly golden and add the ginger and garlic.

3) Add the spices and saute on low heat for about 2 minutes stirring constantly.Add the jalapeno/green chili Add the tomato puree and continue to cook on medium heat, until the oil begins to separate from the sides (about 8 minutes)

4) Add the pumpkin pieces.Stir and mix well.Add salt and water.Mix well, cover and cook on medium until fully cooked (about 10-15 minutes)
